Remove the zest from the orange. Leave half the zest for decoration, put the second part in a saucepan along with sugar and 70 ml of water. We cook the syrup, we need the sugar to dissolve and the syrup to thicken.

Beat the yolks with a mixer until fluffy, pour the hot syrup into the yolks, quickly stirring everything with a spatula.

Peel the bananas, tearing off only one strip, and carefully extract the banana pulp, like... We don't throw away banana peels. Cut the banana pulp into small circles and add to the rest of the ingredients. Blend the mixture in a blender until smooth.

In a separate container, beat the cream and cottage cheese until thick. Add the banana mixture to the cream. Mix the mixture well. Add chocolate melted in the microwave to a third of the mixture, place the resulting mass in a banana peel, as shown in the link above, and freeze for an hour, placing it in the freezer.

Prepare a parfait pan by lining it with cling film. Place half of the banana mixture into the pan.

Take the banana out of the freezer, remove the peel and place the chocolate banana in the middle of the container.

Add the remaining banana mixture. Cover the surface of the mixture with the ends of cling film. Place the mold in the freezer for at least 2 hours.

Parfait is a delicious dish borrowed from French cuisine. The essence of the parfait is that whipped cream with different fillings is frozen. The taste of parfait is not inferior to ice cream, and is often much more tender. I offer this simple recipe for banana parfait.

1. Start whipping the cooled cream with a mixer at low speed (0.5 minutes). Then add 3 tbsp. powdered sugar and continue beating at high speed until the cream takes a stable form.

2. Separate the whites from the yolks. Add a pinch of salt to the chilled whites and beat until stiff peaks form. Without stopping whisking, add another 1 tbsp. powdered sugar.

3. Add the whipped whites to the cream and mix lightly with a spoon using gentle movements from bottom to top.

4. Using a blender, turn the peeled banana into pulp.

5. In a separate bowl, beat the yolks with the remaining powdered sugar and mix them with the banana.

6. Pour the yolk and banana into the molds as the first layer, and whipped cream and egg whites as the second layer. Place in the freezer for 30 - 40 minutes. It is advisable not to over-freeze the dessert so that it does not lose its tenderness and airiness.
